It’s really easy to prepare so it’s perfect for chucking into a box and taking to work, or for a quick lunch, side dish for dinner.

Ingredients:
200 grams kidney beans
4-5 tbsp Thousand Island salad dressing
½ cup cucumber
½ cup carrot
1 cup spinach
½ cup broccoli
½ cup chopped apple
2 tbsp walnut
How to prepare:
- Rinse and drain the kidney beans and soak it overnight (7-8 hours)
- Now pressure cook the overnight soaked kidney beans. Give at least 2-3 whistles on a medium gas flame.
- Dice up the cucumber, carrot, broccoli, chopped apple and spinach.
- Get a big bowl and throw in everything you rinsed and chopped.
- Now mix in the dressing to the salad and add the walnuts.
- And there you have it, your salad is ready!
