Litti Chokha Recipe | Fried Litti Chokha | Makuni Chokha | मकुनी चोखा रेसीपी | लिट्टी चोखा रेसीपी

Famous for its rustic taste, Litti Chokha is a Bihari delicacy where the Litti is made of whole wheat flour, stuffed with sattu (fried gram flour), herbs and spices and baked over coal or cow dung cakes and then finally drizzled with desi ghee. But in the modern day a new fried version has been developed.


The sattu powder used to make Litti has amazing cooling properties and keeps you energized throughout the day.



So let’s start preparing the delicious modern Litti chokha.

Ingredients:


1- For Litti Dough


2 cups of wheat flour

1 tbsp oil

Salt to taste


2- For Litti Stuffing


1 ½ cup of Sattu (Fried Gram Flour)

2 chopped onion

3 green chillies

1 inch finely chopped ginger

4-5 cloves of garlic

Handful of chopped coriander

2 tbsp chilli pickle (or any other pickle)

¼ tsp Kalonji

2 tbsp lemon juice

¼ tsp ajwain

1 tbsp mustard oil

Salt to taste


3- For Aloo Chokha


4-5 boiled potatoes

1 finely chopped onion

2-3 green chillies

Handful of coriander leaves

2 dry red chillies

¼ tsp cumin seeds

¼ tsp roasted coriander seeds

1 tbsp mustard oil

Salt to taste


Instruction for preparing Litti


- Make a soft dough by mixing 1 tbsp of oil and salt. Keep it aside by covering the dough with a cloth.

- To prepare the stuffing take the sattu (fried gram flour) in a bowl, add the finely chopped onion, finely chopped ginger, finely chopped garlic, finely chopped green chillies, finely chopped coriander leaves.

- Now add ¼ tsp ajwain, ¼ tsp kalonji, 2 tbsp chilli pickle, 2 tbsp lemon juice, 1 tbsp mustard oil, salt to taste and mix well.

- Make a ball of the dough, and make a depression by holding it in between fingers and pressing with the thumb.

- Fill it with the stuffing mixture, bring the edges together to seal it and make round balls.

- Press it a little with your palm. Repeat the steps for all the littis.

- Take a bog container and fill it half with water and let it boil.

- Add 1 tbsp of oil to the water and start adding the stuffed litti just before the water starts boiling.

- Keep the gas flame on the medium flame. Boil until all the littis start floating on top of the container.

- Take out all the littis on a plate.

- Heat oil in a pan, and put the dough balls on a low - medium flame. Keep them flipping from time to time.

- Do not overcrowd the oil, deep fry only 4-5 littis at a time, so that they get cooked well from the inside too.

- Take them out once they start turning golden brown. Littis are ready to be served.


Instructions for preparing Aloo Chokha


- In a bowl take boiled potatoes and mash them.

- Add chopped onion, coriander leaves, salt to taste, mustard oil and mix well

- For seasoning, heat the oil, add cumin seeds and dry red chilli. Add the season to the mixture of potato.

- Add roasted coriander seeds to the mixture and mix well.

- Chokha is ready. Serve this with hot Littis and enjoy the flavours.
