Vegetable oats cutlet is best served for evening snacks, they can be prepared easily and taste delicious. These cutlets can be baked, deep-fried, or shallow fried to suit one's diet and taste. It tastes best when had along with a hot cup of tea or coffee during the monsoon or winter season.

Tip: Use very little water while mixing the vegetables with oats.

Serves: 2 (6 cutlets)
Ingredients:
1 cup oats
⅓ cup rava (suji/semolina)
¼ cup curd
1 medium-size onion
½ carrot - finely chopped or grated
1 Green chili
Handful coriander leaves
4-5 curry leaves
Salt to taste
Instruction:
- Heat the pan and add 1 cup of oats and dry roast for 2 mins, until it turns aromatic.
- Now transfer the roasted oats to the bowl and add 1finely chopped onion, ½ finely chopped carrot or grated, coriander leaves, chopped green chilies, and curry leaves.
- Mix well and add ⅓ cup rava (suji/semolina), ¼ cup curd and salt to taste and mix well.
- Add 2 tbsp of water and mix, again add 2 tbsp of water if required, you need to make sure the oats look separated. When touch the mixture you can feel it little slimy that means the mixture is ready.
- Now grease your hands with oil and make ball size round shape and then flatten it with the help of your fingers.
- You can make 6 cutlets in a similar way.
- Heat the pan and add enough oil to shallow fry the cutlets. Fry until it looks golden brown and crispy. Keep flipping in between.
- The vegetable oats cutlet is ready to be served with green chutney or ketchup (which is easily available at home).
